Digging through the pantry last week, I came across a tub of lemon frosting and so I started thumbing through recipes for sugar cookies to go with the frosting. However, dinner was already in the oven & every recipe required the cookie dough to be chilled before baking, which I didn’t have time for. Then, I finally came across a recipe for no chill sugar cookies.

These cookies are yummy & super fast to make. In order to make the process even faster, I opted not to roll the cookie dough out and use fun-shaped cookie cutters {although I do think the girls would have fun doing so the next time around}. Instead, I just formed the dough into 1″ balls and flattened them on the tray with my hand. However, I did decorate some of the cookies with the frosting. For the rest, I covered them with lemon frosting & the girls helped me put sprinkles on top.

Preheat oven to 350ยบ | Yield: appx. 4 dozen {made 54 cookies for me}

Ingredients:

  • 1 C. margarine
  • 1 1/2 C. sugar
  • 1 tsp. vanilla
  • 3 eggs
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 4 C. flour

Directions:

  1. Cream together margarine and sugar.
  2. Beat in vanilla and eggs.
  3. Add salt and soda. Mix well.
  4. Stir in flour.
  5. Roll out dough on floured surface & cut out cookies.
  6. Bake 10 minutes on ungreased cookie sheet.

That’s it! Pretty simple. I recommend moving the cookies from the cookie sheet to your cooling area upon removing them from the oven. Decorate or frost if desired {after the cookies cool}. My girls also like the cookies plain, even the picky eater!
